Reverse Lemon Meringue Pie....

Made this for the first time at bunko too and REALLY liked it!! Not too heavy of a lemon flavor, and meringue crust is perfect!!!

4 eggs, seperated
1 cup sugar
1/4 tsp. cream of tartar
1/2 cup sugar
3 Tbsp. lemon juice
1 Tsbp. grated lemon rind
1/4 tsp. salt
2 cups Whipping Cream

Beat the 4 egg whites, gradually add 1 cup of sugar and cream of tarter. Beat until stiff but not day. Spread on bottom and sides of buttered 9 inch pie pan.

Bake at 350 degrees for 45-60 minutes.

Cool.

Take the 4 egg yokes and beat slightly. Stir in the 1/2 cup sugar, lemon juice, and lemon rind, and salt. Cook until thickened in the microwave for 4 minutes, stirring every 30 seconds. Let cool.

Whip 2 cups whipping cream and fold 1/2 of the whipped cream into the cooled lemon mixture. Pour into cooled meringue shell/crust. Top with the remaining whipped cream. Chill for 24 hours!

Bunko Popcorn

This was a hit at Bunko, so here is the recipe!

8 cups popped popcorn
1 lb. white chocolate, almond bark or melts
2 cups crushed Fritos corn chips
M & M's (I used one regular size bag)

Pop popcorn. Put popped popcorn, fritos and M&M's into a large bowl and evenly mix. Melt white choc. in microwave, stiring every 30 seconds until melted. Pour melted choc. over popcorn ixture and stir to coat compleatly. Pour onto wax paper and allow to cool and dry.

Enjoy!!! and don't blame me if you eat the whole bowl!

Note: Can use regular colored M&M's or colored according to the season!! :)

One pot, Super Easy Pasta Bake

8 oz. elbow Macaroni or any other small shaped pasta
4 1/4 cups spaghetti sauce
1 cup water
1 can (14.5oz) petite diced tomatoes
1 cup shredded mozzerella cheese (or cheese blend)

In a 9x13 baking dish, combine the spaghetti sauce, water, and tomoatoes. Then stir in the raw (uncooked) pasta.

Cover with foil and bake at 350 for 45 minutes to 1 hour or until pasta is tender.

Top with cheese and put back in the oven for 5 minutes or until cheese is melted.

Super Easy, one dish, and mostly quick dinner!! Enjoy!!

Creamy Chicken Tacos

5 frozen chicken breasts
1 1/2 c Salsa
2 cans cream of chicken soup
2 1/2 T Taco seasoning
1 T Maple Syrup
1 t lime juice
1 T butter
1/2 c sour cream

Spray the inside of your crock pot with non stick cooking spray anbd place chicken inside.
In a small mixing bowl, stir together all other ingredients but the butter and sour cream.
Pour sauce over th echicken. Cover and cook on high for 4 hours or low for 6.
Take the chicken out of the crockpot, shread and throw it back in.
Add the pat of butter and the sour cream, stir it all around.
Cook for one more hour on high or 2 on low.

Serve in a bowl over rice or over tortilla chips, like nachos. Top with tomatoes, onions, cheese, lettuce, cilantro, avacado....whatever you like!!!
