One pot, Super Easy Pasta Bake

8 oz. elbow Macaroni or any other small shaped pasta
4 1/4 cups spaghetti sauce
1 cup water
1 can (14.5oz) petite diced tomatoes
1 cup shredded mozzerella cheese (or cheese blend)

In a 9x13 baking dish, combine the spaghetti sauce, water, and tomoatoes. Then stir in the raw (uncooked) pasta.

Cover with foil and bake at 350 for 45 minutes to 1 hour or until pasta is tender.

Top with cheese and put back in the oven for 5 minutes or until cheese is melted.

Super Easy, one dish, and mostly quick dinner!! Enjoy!!

Crepes

1 c all-purpose flour
2 eggs
1/2 c milk
1/2 c water
1/4 tsp salt
2 T butter or margerine, melted

Place ingredients in blender in order given. Blend 30 seconds, stop and stir down sides, Blend 30-60 seconds until smooth. Makes about 16 crepes.

I have a crepe maker that I got at Bed Bath and Beyond. It makes great crepes. Otherwise, I have heard you can make them in a pan over the stove.

Fill with whatever you want!

Pumpkin Dinner





Ingredients
Small to med sized pumpkins
we used 5
1-2 lbs Hamburger
chopped celery
chopped onion
salt and pepper
mushrooms
1 can cream of chicken soup
2 cups cooked rice
about 1/2 cup brown sugar
2-4 tbsp soy sauce
chopped green peppers ( I left them out)

Cut lid of pumpkin and clean it out.
In a large skillet brown hamburger, onion, salt and pepper
(I also added garlic salt and Mrs. Dash)
drain and add chopped veggies
Mix in cream of chicken soup, cooked rice, brown sugar
and soy sauce (i mixed brown sugar and soy sauce in a
blow and then poured it over the top)
Mix everything together and put them in the pumpkins

Place pumpkins on a foil lined cookie sheet
Bake 350 for 1 1/2 hours.

Fried Wontons

my kids love hamburger anything, so they loved these! we served them with fried rice.

1 package wontons

1 lb hamburger
1 cup chopped carrots
1 cup chopped celery
1/2 cup chopped green onion
1 tsp salt
1 tsp seasoning salt
1 egg

we cooked the veggies, then the hamburger, mixed it with the seasonings, and let it cool a bit and added the egg. then we stuffed the wontons with about a teaspoon filling each, formed them into triangles and fried them. be careful when filling them all to not let them dry out, you can just put a wet paper towel over them as you go. we served them with soy sauce for dipping and fried rice.

I let my kids put the filling in the wontons, they had fun, I did have to seal the edges of all of them when I fried them. they did a good job overall though, a fun way for them to help with dinner.

Skillet Laz

I made this the other night, it is another new pampered chef recipe, I had to put it on here because it was really yummy.

Skillet Lasagna

1 jar marinara sauce
3 cups water
8 oz lasagna noodle
1 lb bulk hot italian sausage or regular sausage
2 cloves of garlic pressed
2 oz parmeasan cheese
2 tbsp chopped fresh parley
1 cup fresh ricotta cheese
1/2 cuo shredded mozzarella cheese
1/4 tsp black pepper
additional grated parmeasan cheese (optional)

Combine sauce and water in skillet. Cover; bring to a boil. Meanwhile, wrap noodles in clean kitchen towl and break crosswise into quarter. Stir noodle into sauce. Cover; reduce heat and simmer 16-18 minutes or until noodles are tender, stirring occasionally. As noodles cook, place sauage into skillet;cook and stir over medium heat 6-8 minutes or until sausage is no longer pink, breaking into crumbers. Add pressed garlic; cook 1 minute. Remove from heat. stir sausage into noodles and sauce. Grate parmesan cheese, chop parsley, combine cheeses, parsely and black pepper, in a different bowl. Scoop cheese mixture over noodles, Cover skillet and simmer gently 3-5 minutes

Yield: 6 servings

Jack O Lantern Casserole

(for an easy weeknight meal, you can forgo the whole pumpkin thing and bake in 9X13 until warmed through).
1 medium pumpkin
1 chopped onion
1 to 2 lb. ground beef
2 tablespoons soy sauce
2 tablespoons brown sugar
1 (4 oz.) can mushrooms (optional)
1 can cream of chicken soup
1 1/2 to 2 C. cooked rice
1 (8 oz.) can sliced water chestnuts

Clean out pumpkin and decorate outside with a black marker, if desired. Brown hamburger and onion. Mix in remaining ingredients.

Put pumpkin on cookie sheet. Fill pumpkin with mixture. Place in oven and bake pumpkin with lid on for 1 hour at 350F or until pumpkin is tender. Ladle on to plates out of the pumpkin.

Angie's Hungry Man Hambuger Pasta


Another favorite from Goodthings Utah
This one is quick and easy!

Ingredients:

1 Small Package Angel Hair Pasta
1 Pound Ground Beef
1 Stick of Butter
4 Cloves Garlic (or 2 teaspoons minced garlic)
¼ Cup Parsley Flakes1 Can Black Olives Sliced
1 or 2 Tomatoes Diced
1 cup Fresh Parmesan Cheese Grated
Salt and Pepper
Instructions:
Brown ground beef and season to taste with salt and pepper.
Boil angel hair pasta as instructed on package and drain when cooked.
Set aside beef and pasta. Sauté butter and garlic in small sauce pan for approximately 2 minutes.
Put pasta in large bowl. Pour butter and garlic sauce over pasta and add parsley flakes, mix together. Dish up pasta and top with scoop of beef, scoop of tomatoes, scoop of olives and Parmesan cheese to liking.

Cheeseburger Chowder

I got this off of Goodthings Utah.
We had this last week and it was a hit.
I had to double it for my family of 5.
We also made garlic bread from hambuger buns.

Cheeseburger Chowder

Ingredients: 1 lb. ground beef
2-3 medium russet potatoes, peeled and cubed
½ cup chopped celery
¼ cup chopped onion
1 T. instant beef bouillon granules
¼ t. pepper
½ t. salt
1½ cups water
2½ cups milk
3 T. flour
1 cup shredded sharp Cheddar

Preparations:In large stock pot, brown beef; drain. Stir in potatoes, celery, onion, bouillon, pepper, salt and water. Cover and cook over medium heat for about 20 minutes. In medium bowl, whisk flour into ½ cup of milk; add to pot along with remaining milk. Cook and stir until thick and bubbly. Add cheese; heat and stir until cheese melts

Pasta with Three Cheeses (serve with Sliced Sourdough Bread)

10 oz. dried macaroni or rotini
2 cups frozen broccoli, cauliflower/vegetable combination
1 cup milk
4 oz. cream cheese, cut up
¼ tsp black pepper
¾ cup shredded Gouda, Havarti, or Swiss cheese (3 oz.)
¼ cup grated Parmesan Cheese
Cooked diced chicken (or great meatless)

In a large saucepan cook pasta according to package, adding the frozen vegetables for the last five minutes of cooking. Drain.

In the same saucepan combine milk, cream cheese, and pepper. Cook and stir over low heat until cheese is melted.

Return pasta mixture to saucepan. Toss to coat with cream cheese mixture. Gently stir in the shredded cheese and the ¼ cup parmesan cheese and chicken. If desired, sprinkle individual servings with additional parmesan cheese. Serve Hot.

Cafe Rio

Cafe Rio Pork

3 pounds pork
16 oz bottle salsa blended smooth
1 can coke
2 cups brown sugar

Cook the roast in crockpot 5 hours. Shred and add other ingredients. Cook 2 more hours.
This makes tons, so have a party or freeze half of it.

Black beans

2 cloves garlic
2 tbl olive oil
2 cans black beans
16 oz tomato juice
1 tsp cumin
fresh cilantro

Crush the garlic, cook in the oil. Add the beans and the juice, then the cumin. Simmer and serve with cilantro.
